    Mushrooms in oil

    1 kilo of mushrooms (of even a mixed variety)
    herbs (thyme, laurel, cloves...),
    1 litre of white wine vinegar,
    extravergin olive oil,
    salt and pepper.

    Choose mushrooms which are perfectly healthy and intact; peel them, wash them quickly under running water, dry and cut the larger ones into pieces, leaving the little mushrooms whole.
    Bring the vinegar to boiling point adding 2 glasses of water, the herbs and a handful of salt.
    Then adding the mushrooms boiled them slightly for 4 minutes.
    Drain them and dry into the air leaving them to rest for at least a day. Then arranged them in the jars adding the herbs for seasoning. Cover with oil, close, and sterilize for 20 minutes
