    2 slices white toast
    4 ounces shaved turkey breast
    4 ounces shaved, sugar-cured ham (do not substitute country ham; it's too salty)
    4 slices bacon, cooked crisp
    2 slices tomato
    American cheese sauce, to taste (recipe follows)
    Parmesan cheese for topping (optional)

    Preheat oven broiler. Place toast in an ungreased casserole dish. Top with turkey, ham, bacon, tomato, about one cup of the cheese sauce (do not worry if it seems too watery, that's as it should be - this is a very thin sauce). Sprinkle with Parmesan, if using.

    Cook under broiler until top begins to brown and mixture is bubbly. Serve hot.

    Serves 2. Can easily be doubled.

    American cheese sauce

    6 cups milk
    1 tablespoon chicken base (see note)
    Tabasco, to taste
    1/8 teaspoon garlic powder
    2 small drops yellow food coloring (if desired)
    Pinch white pepper
    8 ounces American cheese, diced or shredded

    In a medium saucepan over medium-high heat, stir together milk, chicken base, Tabasco, garlic powder, food coloring (if using) and pepper. Bring to a boil. (Do not expect sauce to thicken much - this is very thin.) Remove from heat and stir in cheese. Cheese will melt after a few minutes. Stir until smooth.

    Makes 8 cups.

    Note: Extra sauce will keep about 1 week in the refrigerator. Leftovers may be mixed with cooked elbow macaroni for an easy macaroni-and-cheese dish.

    Chicken base: This is a thick, yellowish paste that comes in 1-pint plastic tubs. Other available flavors include mushroom, beef and turkey. The paste flavors a soup like a bouillon cube but isn't as salty.
