    Cyclone Chili

    List of Ingredients





    2 lbs. beef chuck, cut into 1/2-inch cubes
    2 to 4 Tbsp. olive oil
    4 to 6 fresh Jalapeno peppers
    1 medium onion, chopped
    2 cloves garlic, minced
    1/2 green bell pepper, choped coarsely
    8 to 10 tomatillos
    1 8-oz. can tomato sauce
    1 1/2 cups beef broth
    3 Tbsp. chopped fresh cilantro
    1 Tbsp. paprika
    2 tsp. crushed cumin seeds
    1/2 to 1 tsp. salt
    1/4 tsp. cracked black pepper

    Recipe



    Brown beef in hot oil in a large kettle.
    Dice Jalapeno peppers, discarding seeds & membrane.
    Add to beef with onion, garlic, and green pepper.
    Husk tomatillos, wash & chop. There should be 1/2 cup.
    Add to beef mixture.
    Add tomato sauce, beef broth, cilantro, and the rest of the seasonings.
    Bring to a boil, reduce heat and simmer for about 2 hours, until beef is tender
