    Kumquat Flavored Rum

    Recipe Introduction

    This rum makes a great pina colada or can be served just on its own over finely crushed ice. Great for making cajun raisins.

    List of Ingredients

    1 12inch square cheesecloth
    1 lb fresh kumquats, washed and diced
    1 quart light rum

    Place the cheesecloth square flat on a work surface. Into the center of the cloth place the cut kumquats. gather up the cloth to form a bundle, twisting up the ends. Tie the bundle tightly with a string, leaving about 12 inches of string so you can suspend the bundle from the top of the jar. Pour the rum into a large glass jar. Suspend the kumquat bundle 1 inch over the rum and tie the extra string securely around the top of the jar. Seal the top of the jar with plastic wrap and secure tightly with a rubber band to make the jar airtight. Place the jar in a cool, dark place for 2 weeks. (The jar must be tightly sealed in order for the fruit essences to permeate the liquor).
    After 2 weeks remove tha plastic wrap and kumquat bundle from the jar and discard, being careful not to let the fruit touch the surface of the rum at any time during this process. Transfer the rum to an airtight bottle.
