    6 tablespoons butter
    1 cup onion chopped
    6 cloves garlic chopped
    1 pound smoked sausage cut 1/2 inch thick
    2 cups long-grain white rice
    3 medium potatoes peeled and cubed
    4 1/2 cups chicken broth
    1 cup dry white wine
    2 4 oz. jar pimientos sliced
    1 teaspoon turmeric
    cayenne pepper to taste
    1 pound shrimp peeled and de-veined
    cilantro

    Melt butter and add onion and garlic until soft. Add sausage; sauté until beginning to brown. Add rice and stir to coat with pan juices. Mix in potatoes, broth, wine, pimientos with juices and turmeric. Season with salt, pepper and cayenne.

    Bring to a boil; stir well. Reduce heat, cover and cook until rice and potatoes are tender and liquid is absorbed. Mix in shrimp and chopped cilantro. Cover and cook about 4 minutes.
