    Serves 2

    • 1/4 cup olive oil

    • 1/4 cup finely chopped shallots

    • 8 ounces grilled chicken breast, chopped

    • 2 grilled portobello mushrooms, chopped

    • 1/2 cup diced tomatoes

    • 1 cup gemelli pasta (a small spiral pasta shape made with two pasta strands twined together; other small pasta shapes could be substituted)

    • 1 cup white wine

    • 1/4 cup chicken broth

    • 1/2 cup unsalted butter

    • 2 tablespoons grated Parmesan cheese

    • Kosher salt and freshly ground pepper to taste

    • 2 to 4 leaves fresh sage, cut into thin strips

    Heat olive oil in saute pan over medium heat. Add shallots, grilled chicken, grilled mushrooms and tomatoes; saute until mushrooms soften (2 to 3 minutes).

    Meanwhile, cook pasta according to package directions.

    Add white wine to chicken mixture and simmer until liquid is reduced by half. Add chicken broth and bring to a boil; add butter.

    Toss mixture with hot pasta. Add Parmesan, salt and pepper. Garnish with sage.
