    4 cups flour
    2 teaspoons salt
    ½ cup shortening
    2 eggs, beaten
    1 cup milk
    Choice of fillings (recipes follow)

    Directions:

    In a large bowl, combine flour and salt. Cut in shortening until fine crumbs form. Add eggs and milk and form into ball. Chill 2 hours.

    Preheat 2 inches oil in a skillet to 350 F.

    Pinch off enough dough to form a ball about 2 inches in diameter. Roll flat, about the size of a saucer. Repeat with remaining dough.

    Place about 2 tablespoons of filling into lower half of shell. Wet inside edge with water, fold over and press together with a fork to seal. Fry for about 3 minutes, until golden brown, turning as needed.


    Fried Fruit Pie Filling

    Ingredients:

    1 (5-ounce) package of dehydrated apples or peaches
    2 cups water
    ¾ cup sugar

    Directions:

    Simmer dehydrated fruit in water until soft and moist. Stir in sugar. Makes enough filling for about 8 pies.


    Fried Meat Pie Filling

    Ingredients:

    2 pounds ground meat of choice
    1 cup chopped green onions, white and green parts
    1 bell pepper, finely chopped
    ¼ cup chopped parsley
    4 teaspoons finely chopped fresh garlic
    1 teaspoon cayenne pepper
    1 teaspoon black pepper
    2 tablespoons Worcestershire sauce
    ¼ cup flour

    Directions:

    Brown meat. Add onions, bell pepper, parsley, garlic, cayenne and black pepper near end of browning. Cook until the onions are clear, take pan off heat, add Worcestershire sauce. Stir in flour. If too dry, add a little water.

    Makes enough filling for about 15 meat pies.
