    Rodeo Chicken

    List of Ingredients





    1 3 to 3 1/2 pound broiler-fryer chicken, cut up and skin removed if desired
    1/3 cup all purpose flour
    1/4 teaspoon salt
    Dash pepper
    2 tablespoons cooking oil
    1 medium onion, sliced
    1 8-ounce can tomato sauce
    1/4 cup vinegar
    2 tablespoons molasses
    2-3 dashes bottled hot pepper sauce
    1/4 teaspoon celery salt
    1/4 teaspoon pepper
    1/4 teaspoon dry mustard
    1 bay leaf
    1/8 teaspoon dried rosemary, crushed

    Recipe



    Step 1:
    Combine flour, salt, and pepper in a plastic bag. Add chicken pieces; toss to coat.
    Step 2:
    Brown chicken in a 12-inch skillet in the hot oil. Drain off fat. Place onion slices on top of the chicken.
    Step 3:
    Combine remaining ingredients; pour over chicken and onions. Cover and cook over low heat for 35 to 40 minutes or till chicken is tender. Remove chicken to platter. Remove and discard bay leaf. Skim any fat from sauce; serve sauce with chicken.
    Makes 6 servings.
