    Doctored Dirty Rice

    List of Ingredients




    Makes 8 to 12 servings.

    1½ cups long-grain rice

    3 cups water

    ½ pound fresh chicken livers

    1 medium red onion, chopped

    1 green bell pepper, chopped

    1 tablespoon olive oil

    ¼ cup roasted red peppers (from a jar is fine)

    1 cup Dr Pepper

    2 tablespoons to ¼ cup Texas Pete hot sauce

    Salt and pepper to taste

    Several hours in advance or the night before, combine rice and water in a lidded stainless steel pan. Bring water to boil, cover, reduce heat and simmer for 20 minutes. Remove from heat. Cool rice, then refrigerate.

    Rinse the chicken livers. Smoke them in a grill for 1 hour, or bake them at 275 degrees for 40 minutes, or cover them with water and cook them until done, about 30 minutes. Drain and chop roughly into large chunks.

    In a skillet, heat olive oil. Sauté onion several minutes, then add bell pepper. Sauté until onions are soft.

    Combine cooked rice, chopped livers, sautéed vegetables and red peppers. Add Dr Pepper, hot sauce and salt and pepper. Stir until well combined.

    Coat a 13-by-9-inch baking pan with nonstick cooking spray. Spread rice mixture in pan. Bake at 275 degrees about 20 minutes or until hot but rice isn't dried out. Serve.
