    FRUIT SLAW

    List of Ingredients










    8 cups chopped cabbage or packaged slaw mix, see Note

    1 cup shredded carrots

    ½ cup white raisins

    ½ cup dried cranberries (Craisins)

    ¼ cup sliced green onion

    ½ cup chopped fresh parsley

    3 tablespoons shredded coconut

    ½ cup seedless red or green grapes, sliced lengthwise

    ½ cup light (not fat-free) mayonnaise

    ½ cup light (not fat-free) sour cream

    3 tablespoons raspberry or cider vinegar

    Salt, sugar and pepper to taste


    Recipe




    Mix all of the ingredients. The dried fruit and coconut provide a certain amount of sugar. You may want to add some more according to your taste. Can also use dried apricots or fresh apples.
    Serves 12-16
    Note: Sometimes cabbage is a little bitter; if so, use a pinch or two of sugar or honey to sweeten it.
