    SMOKED-POTATO SALAD

    12 medium-size red potatoes, scrubbed
    and pierced


    ¼ cup chopped green onions

    ¼ cup red wine vinegar

    ¼ cup olive oil

    5 tablespoons coarse mustard

    ½ cup mayonnaise (more if you like it
    creamier)


    Salt and pepper to taste


    Preheat the oven to 400 F. Bake potatoes for 45 minutes (unpeeled).

    Transfer the potatoes to a smoker. Cook over low heat (250 F to 275 F) for an hour along with the meat.

    Dice potatoes into 1-inch chunks. Toss remaining ingredients in a bowl, add potatoes, and stir to combine. Makes 6 servings.
