    Cream of Roasted Jalapeño Soup

    List of Ingredients







    12 large jalapeños, roasted, peeled and seeded
    1 small onion, chopped
    ½ cup whipping cream
    2 tablespoons butter
    2 tablespoons flour
    4 cups chicken broth
    Salt to taste
    Sour cream for garnish


    Directions:

    Place jalapeños, onion and cream in blender or food processor and blend until smooth. Use small amounts of broth if needed to blend.

    In medium saucepan over medium heat, melt butter. Gradually add flour, stirring constantly. Gradually add chile purée, stirring constantly. Slowly stir in broth. Add salt to taste.

    Continue to stir over medium heat until thickened and smooth. Serve topped with a dollop of sour cream. Makes 8 servings
