    8 baking potatoes (such as russets)

    1/2 pound lean bacon

    1 stick (1/2 cup) butter, melted

    1 large green bell pepper, seeded and diced

    1 small onion, diced 1 or 2 stalks celery, diced (optional)

    1/2 cup milk

    1/2 pound American cheese

    1/2 pound easy melt jalapeño cheese
    Bake potatoes until tender, let cool until you can handle them. Peel potatoes; discard peels and cut potato into cubes; set aside. Fry bacon, crumble and set aside, saving drippings.

    To drippings, add melted butter, bell pepper, onion and celery, if using. Sauté until vegetables are tender. Add milk and cheeses to vegetable mixture and slowly simmer until cheese is melted. Pour mixture over baked potatoes, sprinkle with bacon crumbles and mix thoroughly. If mixture is still warm enough, serve. Or, put in baking pan and warm in preheated 350-degree oven until hot.

    Makes 10-12 servings.
