    8 to 10 baby white or red potatoes
    1 cup shredded cheddar cheese
    1/8 cup diced green or red bell pepper
    1/8 cup diced yellow onion
    Salt and freshly ground pepper to taste

    Heat oven to 350 degrees. Place whole, unpeeled potatoes in a large pan. Cover with water and bring to boil. Reduce to a simmer and cook 10 to 15 minutes or until potatoes are still firm, but not soft or overdone. Immediately drain and place in ice water to stop the cooking.
    Leaving the skin on, cut potatoes into one-inch chunks. In a bowl, combine potatoes, cheese, peppers and onions. Season with salt and pepper. Toss lightly to combine.
    Place mixture in a shallow baking pan that has been lightly coated with nonstick cooking spray. Cover tightly with foil and bake 15 minutes. Remove foil and bake 5 minutes longer.
    Makes 4 servings
