    SPICY BLACKEYED PEAS WITH ANDOUILLE

    8 ounces bacon (smoked) -- diced

    8 ounces andouille sausage -- diced

    8 cloves garlic -- minced

    1/2 cup shallot -- minced

    2 cups yellow onion -- diced small

    4 cups blackeyed peas

    2 cups beer (of your choice)

    2 quarts chicken stock

    1/4 cup red pepper -- diced small

    1/4 cupyellow pepper -- diced small

    1/4 cup poblano pepper -- diced small

    2 tablespoons jalapeno -- diced small

    2 teaspoons tabasco sauce

    2 tablespoons Worcestershire sauce

    2 tablespoons cracked black pepper

    2 tablespoons kosher salt

    2 tablespoons thyme leaves -- chopped

    1/2 cup scallion -- chopped


    In a large sauce pot cook bacon and andouille sausage until bacon renders it's fat and starts to get crisp. 2. As bacon gets crisp add garlic, shallots, and yellow onions and continue to cook until onions start to caramelize. 3. When the onions are caramelized to golden brown color add the blackeyed peas. 4. Deglaze with beer and continue cooking until beer is almost evaporated. 5. Cover with chicken stock and cook on medium heat until peas start to soften. 6. After peas start to soften add red pepper, yellow pepper, poblano, and jalapeno peppers. 7. Continue cooking on low heat until the peas start to get creamy and peppers start to soften. 8. Season with tabasco sauce, worcestershire sauce, cracked black pepper and kosher salt. 9. Garnish with chopped thyme and scallions.
