    parsley – fresh flat-leaf – 1/4C chopped

    olive oil – ¼ C
    pumpernickel sandwich bread – 12 slices
    mild goat cheese, soft – 6 oz (spreadable)

    The following ingredients are for Moroccan Vegetable Stew,
    Eggplant – 1 medium
    Onions - 6 small
    Tomatoes, canned, chopped – 24 oz
    Zucchini – 3 medium
    Sweet potatoes – 2 medium
    Green pepper – 1
    Celery – 2 stalks
    Garbanzo beans – 1 15 oz can
    Kidney beans – 1 15 oz can
    Parsnips – 5
    Garlic – 4 cloves
