    • 1 CUP ELBOW MACARONI
    • 1 TEASPOON OLIVE OIL
    • 20 ALREADY PEELED BABY CARROTS SLICED, 1 CUP
    • 1 CUP FROZEN CHOPPED ONIONS
    • 2 TESAPOONS BOTTLED MINCED GARLIC
    • 14 1/2 OUNCE CAN S EACH BEEF BROTH AND VEGETABLE BROTH
    • 14 1/2 CAN ITALIAN STYLE STEWED TOMATOESSS
    • 8 OUNCE CAN TOMATO SAUCE
    • 1 1/2 TEASPOONS DRIED ITALIAN SEASONING
    • 1/2 TEASPOONS SGAR
    • 1 CUP FROZEN GREEN BEANS
    • 15 OUNCE CAN RED KIDNEY BEANS
    • 7 3/4 OUNCE CAN CHICKPEAS
    • 2 1/4 OUNCE CAN SLICED BLACK OLIVES
    • BLACK PEPPER TO TASTE
    • GRATED PARMESAN CHEESE FOR GARNISH


    Instructions


    1. BRING 5 CUP OF UNSALTED WATER TO A BOIL IN A COVERED 2 QUART OR LARGE STOCK POT OVER HIGH HEAT. WHEN THE WATER REACHES A RAPID BOIL, ADD THE NOODLES AND COOK 7 MINUTES, DONE BUT STILL FIRM.
    2. HEAT OIL IN A 4 1/2 QUART DUTCH OVEN OR SOUP POT OVER MEDIUM HIGH HEAT. ADD SLICED CARROTS TO THE POT, COOK STIRRING OCCASIONALLY FOR 1 MINUTE. ADD THE ONIONS AND CONTINUE TO COOK 1 MINUTE. ADD THE GARLIC AND CONTINUE TO COOK UNTIL THE CARROTS ARE CRISP TENDER ABOUT 1 MINUTE MORE.
    3. WHILE THE VEGETABLES COOK, REMOVE ANY VISIBLE FAT FROM THE BEEF BROTH. RAISE THE HEAT TO HIGH. IMMEDIATELY ADD BOTH BROTHS, THE STEWED TOMATOES, TOMATO SAUCE, ITALIAN SEASONING, AND SUGAR. COVER THE POT AND BRING THE SOUP TO A BOIL.
    4. MEANWHILE, PLACE THE GREEN BEANS IN A MICROWAVE SAFE DISH ON HIGH FOR 1 MINUTE, UNCOVERED. ALSO RINSE AND DRAIN THE KIDNEY BEANS AND THE CHICKPEAS, DRAIN THE OLIVES.
    5. WHEN THE SOUP IS BOILING, ADD THE GREEN BEANS, KIDNEY BEANS, CHICKPEAS, AND OLIVES. LET THE SOUP BOIL FOR ABOUT 5 MINUTES LONGER.
    6. THE MACARONI WILL BE JUST DONE DURING THIS TIME. DRAIN IT AND IN THE LAST MINUTE OF SOUP BOILING, ADD IT TO THE SOUP POT. SEASON WITH BLACK PEPPER TO TASTE, STIR AND SERVE WITH PARMESAN CHEESE.
