MELTED CHEESE DIP
List of Ingredients
- 2 POUNDS MONTEREY JACK CHEESE, GRATED OR SHREDDED
- 1/4 CUP FLOUR
- 1 1/3 CUPS BEER
- 1/2 CUP CHOPPED FRESH CILANTRO, OPTIONAL
- 4 TEASPOONS MINCED JALAPENO CHILIES
Instructions
- PLACE CHEESE IN A LARGE BOWL. ADD FLOUR AND TOSS TO COAT THE CHEESE WELL. SET ASIDE.
- IN A LARGE HEAVY SAUCEPAN, BRING BEER TO A BOIL. REDUCE THE HEAT TO LOW AND ADD A HANDFUL OF CHEESE TO BEER, STIR CONSTANTLY UNTIL CHEESE MELTS. REPEAT WITH REMAINING CHEESE, STIRRING UNTIL THICK AND CREAMY. (DO NOT BOIL). STIR IN CILANTRO ( IF USING) AND CHILIES. SEASON WITH SALT AND PEPPER. (OPTIONAL).
- POUR CHEESE MIXTURE INTO A FONDUE POT OR IN A MINI-SLOW COOKER TO KEEP WARM.
- SERVE WITH HOMEMADE TORTILLA OR STORE BOUGHT CHIPS.
