3 CUPS FLOUR
2 CUPS SUGAR
1 TEASPOON BAKING SODA
1 TEASPOON SALT
1 TEASPOON CINNAMON
1 CUP CHOPPED ALMONDS
3 EGGS
1 1/2 CUPS VEGETABLE OIL
1 TEASPOON ALMOND EXTRACT
2 CUPS RIPE FIRM BANANAS, CHOPPED
8 OUNCE CRUSHED PINEAPPLES, UNDRAINED
FROSTING:
8 OUNCE CREAM CHEESE
1/2 CUP BUTTER, SWEET
1 POUND CONFECTIONERS' SUGAR
1 TEASPOON INSTANT CHOCOLATE
Instructions
PREHEAT OVEN TO 325°.GREASE WELL A 10" TUBE PAN AND SET ASIDE.
SIFT TOGETHER FLOUR, SUGAR, BAKING SODA, SALT AND CINNAMON IN A BOWL, STIR IN NUTS.
IN AMOTHER BOWL, BEAT EGGS SLIGHTLY, ADD OIL, ALMOND EXTRACT, BANANAS AND PINEAPPLE WITH JUICE. MIX WELL AND ADD TO DRY INGREDIENTS.
MIX THOROUGHLY BUT DO NOT BEAT.
SPOON INTO PREPARED TUB PAN. BAKE FOR 1 HOUR AND 20 MINUTES. COOL 15 MINUTES.
INVERT ON CAKE RACK.
CREAM THE SOFTENED CREAM CHEESE AND SOFTENED BUTTER WITH CONFECTIONERS' SUGAR AND CHOCOLATE. MIX WELL. STORE IN REFRIGERATOR UNTIL READY TO FROST CAKE FOR SERVING.
