PUMPKIN CRUNCH CAKE

- 18 1/4 OUNCE YELLOW CAKE MIX, DIVIDED
- 2 LARGE EGGS
- 1 2/3 CUPS LIBBY'S PUMPKIN PUREE
- 2 TEASPOONS PUMPKIN SPICES
- 1/3 CUPS FLAKED COCONUT
- 1/4 CUP CHOPPED NUTS
- 3 TABLESPOONS SOFT BUTTER OR MARGARINE
Instructions
- PREHEAT OVEN TO 350°. GREASE A 13 X 9" BAKING PAN. SET ASIDE.
- COMBINE 3 CUPS OF YELLOW CAKE MIX, EGGS, PUMPKIN AND PUMPKIN PIE SPICES IN A LARGE MIXER BOWL. BEAT ON LOW SPEED UNTIL MOISTENED. BEAT ON MEDIUM SPEED FOR 2 MINUTES. POUR INTO PREPARED BAKING PANS. SET ASIDE.
- COMBINE REMAINING CAKE MIX, COCONUT AND NUTS IN A SMALL BOWL, CUT IN BUTTER WITH A PASTRY KNIFE OR YOUR FINGERS UNTIL MIXTURE IS CRUMBLY. SPRINKLE OVER BATTER.
- BAKE FOR 30 TO 35 MINUTES OR UNTIL WOODEN PICK INSERTED IN CENTER COMES OUT CLEAN. COOL PAN ON A WIRE RACK.
