TAFFY APPLE CAKE

List of Ingredients
- 1 1/2 CUPS SOFT BUTTER
- 4 1/2 CUPS SIFTED CONFECTIONERS' SUGAR
- 1 TABLESPOON VANILLA
- 6 EGGS
- 3 1/4 CUPS FLOUR
- 2 TEASPOONS GROUND CINNAMON
- 1 TEASPOON GROUND ALLSPICE
- 16 DICED CARMELS
- 1 1/2 CUPS COARSELLY CHOPPED APPLES, PEELED AND CORED
Instructions
- PREHEAT OVEN TO 325°. GREASE A 10" TUBE OR BUNDT PAN.
- UNWRAP AND CUT EACH CARMEL INTO 8 PIECES. SET ASIDE.
- IN A LARGE MIXER BOWL, CREAM BUTTER, CONFECTIONERS' SUGAR AND VANILLA UNTIL LIGHT AND FLUFFY. ADD THE EGGS, ONE AT A TIME, BEATING WELL AFTER EACH ONE.
- GRADUALLY ADD FLOUR, CINNAMON AND ALLSPICE TO THE EGG MIXTURE. BLEND AT LOW SPEED UNTIL THOROUGHLY COMBINED. BY HAND STIR IN THE CARMEL PIECES AND THE CHOPPED APPLES.
- POUR THE BATTER INTO PREPARED PAN.
- BAKE FOR 85 TO 90 MINUTES OR UNTIL CAKE TESTER COMES OUT CLEAN.
- COOL UPRIGHT IN PAN FOR 15 MINUTES BEFORE INVERTING ONTO A SERVING PLATTER.
- SERVE CAKE WARM OR COOLED.
- YOU CAN GARNISH CAKE SLICES WITH ICE CREAM AND CARMEL SAUCE.
- THIS CAKE CAN ALSO BE BAKED IN A 9 X 13" BAKING PAN FOR 75 TO 80 MINUTES.
