SUPER DELICIOUS MACARONI AND CHEESE

THIS IS MY FAVORITE MACARONI AND CHEESE RECIPE AND MY CHILDREN JUST GO NUTS OVER IT EVERYTIME I MAKE. MY SON ALWAYS REQUESTS THIS AS A SIDE DISH FOR THANKSGIVING. I HOPE THAT YOU ENJOY IT AS MUCH A WE DO.
List of Ingredients
- 8 TABLESPOONS BUTTER
- 6 TABLESPOONS FLOUR
- 1/2 TEASPOON CAYENNE PEPPER
- SALT AND WHITE PEPPER
- 3 3/4 CUPS HOT 1/2 N 1/2 OR MILK
- 4 CUPS GRATED SHARP CHEDDAR CHEESE
- 1 LB BOX ELBOW MACARONI, COOKED AND DRAINED
- 1/2 CUP HEAVY CREAM
- 3/4 TO 1 CUP OF SEASONED BREAD CRUMBS
Instructions
- PREHEAT OVEN TO 350°.
- MELT 6 TABLESPOONS OF BUTTER IN A MEDIUM SAUCE PAN OVER LOW HEAT. ADD THE FLOUR AND COOK STIRRING COSTANTLY ABOUT 3 TO 4 MINUTES OR UNTIL THE MIXTURE FOAMS AS IT IS COOKING OR IT WILL HAVE A NASTY FLOUR TASTE. STIR IN THE CAYENNE AND SEASON TO TASTE WITH SALT AND PEPPER.
- WHISK IN HOT MILK A 1/2 CUP AT A TIME AND COOK STIRRING UNTIL MIXTURE THICKENS.
- REDUCE HEAT TO LOW AND STIR IN 2 CUPS OF CHEDDAR CHEESE. COOK UNTIL CHEESE MELTS, STIRRING OFTEN, THIS SHOULD TAKE ABOUT 2 TO 3 MINUTES.
- COMBINE PASTA AND CHEESE SAUCE IN A LARGE BOWL AND SEASON WITH ADDITIONAL SALT. SPRINKLE A 1/2 CUP OF CHEESE OVER THE BOTTOM OF A WELL BUTTERED 8 X 10" BAKING DISH.
- PLACE A THIRD OF THE PASTA IN DISH THEN TOP WITH 1/2 CUP OF CHEESE, REPEAT LAYERING PASTA AND CHEESE ENDING WITH CHEESE ON TOP MAKING THREE LAYERS TOTAL.
- POUR HEAVY CREAM OVER MACARONI AND CHEESE. MELT REMAINING BUTTER IN A SAUCE PAN, ADD BREAD CRUMBS AND MIX WELL. SPRINKLE OVER MACARONI AND CHEESE COVERING ENTIRE TOP.( I ALWAYS TRIPLE THE BREAD CRUMB TOPPING, BECAUSE MY FAMILY LOVES IT).
- BAKE UNTIL THE CRUST IS GOLDEN BROWN FOR APPROXIMATELY 25 TO 35 MINUTES. REMOVE FROM OVEN AND PLACE ON A WIRE RACK AND LET REST FOR 10 TO 15 MINUTES BEFORE SERVING.
