ALMOND JOY COOKIE BALLS
List of Ingredients
- 2 ( 1 OUNCE) SQUARES UNSWEETENED CHOCOLATE
- 14 OUNCE CAN SWEETENED CONDENSED MILK
- 3 CUPS FLAKED COCONUT
- 1/2 TEASPOON VANILLA
- 1/8 TEASPOON SALT
- 1 1/2 CUPS WHOLE ALMONDS
Instructions
- PREHEAT OVEN TO 350°. LINE A BAKING SHEET WITH PARCHMENT PAPER.
- ADD CHOCOLATE AND CONDENSED MILK IN A DOUBLE BOILER OVER LOW HEAT, MELT UNTIL SMOOTH.
- POUR THE MELTED CHOCOLATE MIXTURE OVER COCONUT IN A BOWL. STIR IN VANILLA AND SALT.
- MIX WELL UNTIL THE COCONUT IS COMPLETELY COATED.
- DROP DOUGH BY TEASPOONSFULS ONTO THE PREPARED BAKING SHEET. PRESS ONE WHOLE ALMOND INTO THE TOP OF EACH COOKIE.
- BAKE FOR 10 TO 12 MINUTES.
- CHECK THE COOKIES AROUND 8 MINUTES AS THE BOTTOMS TEND TO BURN EASILY.WATCH CAREFULLY.
- REMOVE FROM OVEN TO A WIRE RACK AND COOL
