    ALMOND JOY COOKIE BALLS


    List of Ingredients


    • 2 ( 1 OUNCE) SQUARES UNSWEETENED CHOCOLATE
    • 14 OUNCE CAN SWEETENED CONDENSED MILK
    • 3 CUPS FLAKED COCONUT
    • 1/2 TEASPOON VANILLA
    • 1/8 TEASPOON SALT
    • 1 1/2 CUPS WHOLE ALMONDS


    Instructions


    1. PREHEAT OVEN TO 350°. LINE A BAKING SHEET WITH PARCHMENT PAPER.
    2. ADD CHOCOLATE AND CONDENSED MILK IN A DOUBLE BOILER OVER LOW HEAT, MELT UNTIL SMOOTH.
    3. POUR THE MELTED CHOCOLATE MIXTURE OVER COCONUT IN A BOWL. STIR IN VANILLA AND SALT.
    4. MIX WELL UNTIL THE COCONUT IS COMPLETELY COATED.
    5. DROP DOUGH BY TEASPOONSFULS ONTO THE PREPARED BAKING SHEET. PRESS ONE WHOLE ALMOND INTO THE TOP OF EACH COOKIE.
    6. BAKE FOR 10 TO 12 MINUTES.
    7. CHECK THE COOKIES AROUND 8 MINUTES AS THE BOTTOMS TEND TO BURN EASILY.WATCH CAREFULLY.
    8. REMOVE FROM OVEN TO A WIRE RACK AND COOL
    9. 48 COOKIES
