    JUMBO SPICED APPLE RAISIN COOKIES


    List of Ingredients


    • 1/4 CUP SOFTENED BUTTER
    • 1/4 CUP VEGETABLE OIL
    • 3/4 CUPS PACKED BROWN SUGAR
    • 1 LARGE EGG AT ROOM TEMPERATURE
    • 1 TEASPOON VANILLA
    • 3/4 CUPS WHOLE WHEAT FLOUR
    • 1/2 TEASPOON BAKING SODA
    • 1 TEASPOON CINNAMON
    • 3/4 CUPS ROLLED OATS
    • 1 CUP TART APPLES, CORED, PEELED AND CHOPPED
    • 1/2 CUP RAISINS


    Instructions


    1. PREHEAT OVEN TO 350°. GREASE 2 BAKING SHEETS AND SET ASIDE.
    2. IN A LARGE BOWL, CREAM TOGETHER THE BUTTER, OIL AND BROWN SUGAR UNTIL SMOOTH. ADD EGG AND VANILLA AND BEAT UNTIL LIGHT.
    3. STIR TOGETHER THE FLOUR, BAKING SODA AND CINNAMON IN A SEPERATE BOWL. ADD TO CREAMED MIXTURE AND MIX UNTIL WELL BLENDED. STIR IN OATMEAL, APPLE AND RAISINS UNTIL WELL COMBINED.
    4. USING A 1/3 CUP MEASURE, SCOOP DOUGH FROM BOWL AND PLACE 3" APART ON THE BAKING SHEETS. FLATTEN SLIGHTLY USING A FORK OR SPATULA.
    5. BAKE 10 TO 15 MINUTES OR UNTIL THE COOKIES FEEL FIRM TO THE TOUCH. THE COOKIES MAY SINK A LITTLE IN THE CENTER AS THEY COOL. REMOVE FROM BAKING SHEETS TO A WIRE RACK AND COOL COMPLETELY.
