JUMBO SPICED APPLE RAISIN COOKIES
List of Ingredients
- 1/4 CUP SOFTENED BUTTER
- 1/4 CUP VEGETABLE OIL
- 3/4 CUPS PACKED BROWN SUGAR
- 1 LARGE EGG AT ROOM TEMPERATURE
- 1 TEASPOON VANILLA
- 3/4 CUPS WHOLE WHEAT FLOUR
- 1/2 TEASPOON BAKING SODA
- 1 TEASPOON CINNAMON
- 3/4 CUPS ROLLED OATS
- 1 CUP TART APPLES, CORED, PEELED AND CHOPPED
- 1/2 CUP RAISINS
Instructions
- PREHEAT OVEN TO 350°. GREASE 2 BAKING SHEETS AND SET ASIDE.
- IN A LARGE BOWL, CREAM TOGETHER THE BUTTER, OIL AND BROWN SUGAR UNTIL SMOOTH. ADD EGG AND VANILLA AND BEAT UNTIL LIGHT.
- STIR TOGETHER THE FLOUR, BAKING SODA AND CINNAMON IN A SEPERATE BOWL. ADD TO CREAMED MIXTURE AND MIX UNTIL WELL BLENDED. STIR IN OATMEAL, APPLE AND RAISINS UNTIL WELL COMBINED.
- USING A 1/3 CUP MEASURE, SCOOP DOUGH FROM BOWL AND PLACE 3" APART ON THE BAKING SHEETS. FLATTEN SLIGHTLY USING A FORK OR SPATULA.
- BAKE 10 TO 15 MINUTES OR UNTIL THE COOKIES FEEL FIRM TO THE TOUCH. THE COOKIES MAY SINK A LITTLE IN THE CENTER AS THEY COOL. REMOVE FROM BAKING SHEETS TO A WIRE RACK AND COOL COMPLETELY.
