    LEMON BUTTER COOKIES

    THESE ARE TASTY AND WONDERFUL LITTLE GEMS.


    List of Ingredients


    • 1/2 CUPS SUGAR
    • 1/2 CUP CONFECTIONERS SUGAR
    • 3/4 CUP SOFTENED BUTTER
    • 1/2 CUP OIL
    • 1 TABLESPOON GRATED LEMON PEEL
    • 1 TABLESPOON LEMON JUICE
    • 1 EGG
    • 2 1/2 CUPS FLOUR
    • 1/2 TEASPOON CREAM OF TARTAR
    • 1/2 TEASPOON BAKING SODA
    • 1/4 TEASPOON SALT


    Instructions


    1. IN A LARGE MIXING BOWL, BEAT SUGAR, POWDER SUGAR, BUTTER AND OIL UNTIL LIGHT AND FLUFFY. ADD LEMON PEEL, LEMON JUICE AND EGG, BLENDING WELL.
    2. STIR IN FLOUR, CREAM OF TARTAR, BAKING SODA AND SALT, BLENDING WELL. COVER WITH PLASTIC WRAP AND REFRIGERATE FOR 1 HOUR FOR EASY HANDLING.
    3. PREHEAT OVEN TO 350°
    4. SHAPE DOUGH INTO 1" BALLS, ROLL IN SUGAR. PLACE 2" APART ON UNGREASED COOKIE SHEETS. BAKE FOR 7 TO 12 MINUTES OR UNTIL SET. IMMEDIATELY REMOVE FROM COOKIE SHEET TO A WIRE RACK.
