OATMEAL SLIMMED DOWN COOKIES
List of Ingredients
- 1 CUP DARK BROWN SUGAR
- 1/2 CUP SUGAR
- 1/2 TEASPOON GROUND CINNAMON
- 1/4 CUP APPLESAUCE
- 3 TABLESPOONS REDUCED CALORIE MARGARINE
- 2 TABLESPOONS VEGETABLE OIL
- 1 LARGE EGG WHITE
- 1 TEASPOON VANILLA FLAVORING
- 1 CUP RAISINS
- 2 3/4 CUPS ROLLED OATS
- 1 CUP FLOUR
- 3/4 TEASPOON BAKING SODA
- 1/2 TEASPOON BAKING POWDER
- BUTTER FLAVORED COOKING SPRAY
Instructions
- PREHEAT OVEN TO 350°.
- IN A MEDIUM MIXING BOWL, COMBINE THE BROWN SUGAR, REGULAR SUGAR AND CINNAMON. STIR WELL TO BLEND. ADD THE APPLESAUCE, MARGARINE, OIL, EGG WHITE, MAPLE EXTRACT AND VANILLA. STIR WELL UNTIL THE MIXTURE IS CREAMY AND IS MIXED WELL. ADD RAISINS INTO THE MIXTURE AND SET ASIDE.
- IN A SEPARATE MIXING BOWL, COMBINE ROLLED OATS, FLOUR, BAKING SODA AND BAKING POWDER. STIR INGREDIENTS WELL. POUR SUGAR MIXTURE INTO THE OAT MIXTURE UNTIL WELL BLENDED.
- ROLL COOKIE DOUGH INTO SMALL 1" BALLS AND PLACE ON AN INSULATED BAKING SHEET LELAVING 3" BETWEEN EACH BALL.
- "FOR BEST RESULTS, REFRIGERATE THE COOKIES FOR AT LEAST AN HOUR BEFORE BAKING".
- WHEN READY TO BAKE, LIGHTLY SPRAY EACH BALL WITH BUTTER FLAVORED COOKING SPRAY.
- BAKE FOR 10 MINUTES AND REMOVE FROM OVEN AND LET COOL FOR A FEW MINUTES, THEN REMOVE TO A WIRE RACK TO COOL COMPLETELY.
- ****FOR CRISP COOKIES, FLATTEN DOUGH BALLS WITH THE BACK OF A SPOON OR A FLOURED GLASS BOTTOM.
