    SOUR CREAM FIGURE EIGHTS


    List of Ingredients


    • 1/2 CUP BUTTER OR MARGARINE
    • 1 CUP SUGAR
    • 1 EGG
    • 1/2 TEASPOON VANILLA EXTRACT
    • 2 3/4 CUPS FLOUR
    • 1/2 TEASPOON BAKING SODA
    • 1/4 TEASPOON SALT
    • 1/4 TEASPOON GROUND NUTMEG, OPTIONAL
    • 1/2 CUP SOUR CREAM
    • 2 TABLESPOONS SUGAR
    • 1/2 TEASPOON GROUND CINNAMON


    Instructions


    1. PREHEAT OVEN TO 350°.
    2. IN A LARGE BOWL BEAT BUTTER OR MARGARINE UNTIL SOFTENED. ADD 1 CUP SUGAR AND BEAT UNTIL LIGHT AND FLUFFY. ADD THE EGG AND VANILLA AND BEAT WELL.
    3. STIR TOGETHER THE FLOUR, BAKING SODA, SALT AND NUTMEG. ADD FLOUR MIXTURE AND SOUR CREAM ALTERNATELY TO BUTTER MIXTURE. BEAT UNTIL WELL MIXED.
    4. COVER AND CHILL AT LEAST 2 HOURS OR UNTIL EASY TO HANDLE.
    5. COMBINE CINNAMON AND 2 TABLESPOONS OF SUGAR IN A SMALL BOWL. ROLL DOUGH 1/8" THICK. CUT INTO RINGS WITH A 2 1/2" DOUGHNUT CUTTER.
    6. TWIST THE RINGS ONCE TO FORM FIGURE EIGHTS AND PLACE 2" APART ON AN UNGREASED COOKIE SHEET. SPRINKLE WITH CINNAMON SUGAR MIXTURE AND BAKE FOR 6 TO 8 MINUTES OR UNTILE DONE. REMOVE AND COOL ON A WIRE RACK.
    7. MAKES 5 DOZEN

    8. IF YOU DON'T HAVE A DOUGHNUT CUTTER, USE A 2 1/2" BISCUIT CUTTER, THEN TAKE A SMALL BOTTLE CAP AND CUT OUT A CIRCLE IN CENTER OF COOKIE. THIS WORKS REAL WELL.
