SOUR CREAM FIGURE EIGHTS
List of Ingredients
- 1/2 CUP BUTTER OR MARGARINE
- 1 CUP SUGAR
- 1 EGG
- 1/2 TEASPOON VANILLA EXTRACT
- 2 3/4 CUPS FLOUR
- 1/2 TEASPOON BAKING SODA
- 1/4 TEASPOON SALT
- 1/4 TEASPOON GROUND NUTMEG, OPTIONAL
- 1/2 CUP SOUR CREAM
- 2 TABLESPOONS SUGAR
- 1/2 TEASPOON GROUND CINNAMON
Instructions
- PREHEAT OVEN TO 350°.
- IN A LARGE BOWL BEAT BUTTER OR MARGARINE UNTIL SOFTENED. ADD 1 CUP SUGAR AND BEAT UNTIL LIGHT AND FLUFFY. ADD THE EGG AND VANILLA AND BEAT WELL.
- STIR TOGETHER THE FLOUR, BAKING SODA, SALT AND NUTMEG. ADD FLOUR MIXTURE AND SOUR CREAM ALTERNATELY TO BUTTER MIXTURE. BEAT UNTIL WELL MIXED.
- COVER AND CHILL AT LEAST 2 HOURS OR UNTIL EASY TO HANDLE.
- COMBINE CINNAMON AND 2 TABLESPOONS OF SUGAR IN A SMALL BOWL. ROLL DOUGH 1/8" THICK. CUT INTO RINGS WITH A 2 1/2" DOUGHNUT CUTTER.
- TWIST THE RINGS ONCE TO FORM FIGURE EIGHTS AND PLACE 2" APART ON AN UNGREASED COOKIE SHEET. SPRINKLE WITH CINNAMON SUGAR MIXTURE AND BAKE FOR 6 TO 8 MINUTES OR UNTILE DONE. REMOVE AND COOL ON A WIRE RACK.

- IF YOU DON'T HAVE A DOUGHNUT CUTTER, USE A 2 1/2" BISCUIT CUTTER, THEN TAKE A SMALL BOTTLE CAP AND CUT OUT A CIRCLE IN CENTER OF COOKIE. THIS WORKS REAL WELL.
