TRUFFLE ESPRESSO COOKIES
List of Ingredients
- 1/2 CUP SWEET BUTTER SOFTENEDD
- 1/2 CUP SEMISWEET CHOCOLATE CHIPS
- 1 TABLESPOON INSTANT COFFEE CRYSTALS OR FINELY GROUND WHOLE BEANS
- 3/4 CUPS SUGAR
- 3/4 CUPS PACKED BROWN SUGAR
- 2 BEATEN EGGS
- 2 TEASPOONS VANILLA
- 2 CUPS FLOUR
- 1/3 CUPS UNSWEETENED COCOA POWDER
- 1/2 TEASPOON BAKING POWDER
- 1/4 TEASPOON SALT
- 1 CUP SEMISWEET CHOCOLATE CHIPS
Instructions
- PREHEAT OVEN TO 350°. LIGHTLY GREASE COOKIE SHEET AND SET ASIDE.
- IN A LARGE SAUCEPAN MELT BUTTER AND 1/2 CUP CHOCOLATE CHIP PIECES OVER LOW HEAT. REMOVE FROM HEAT AND STIR IN COFFEE MIXING WELL TO INCORPORATE. COOL 5 MINUTES. STIR IN SUGARS, EGGS AND VANILLA BLENDING WELL UNTIL SMOOTH.
- IN A MIXING BOWL, COMBINE FLOUR, COCOA POWDER, BAKING POWDER AND SALT, BLENDING WELL TO INCORPORATE. STIR INTO COFFEE MIXTURE. STIR IN 1 CUP OF CHOCOLATE CHIPS.
- DROP BY ROUNDED TABLESPOONS ONTO PREPARED COOKIE SHEETS.
- BAKE 10 MINUTES. REMOVE FROM OVEN AND LET COOL FOR 1 MINUTE ON COOKIE SHEETS BEFORE REMOVING TO A WIRE RACK. COOL COMPLETELY.
