ITALIAN POTATO PIE
List of Ingredients
- 2 POUNDS PEELED POTATOES
- 1/4 CUP SOFTENED BUTTER
- 1/2 CUP SOUR CREAM
- 1/2 CUP CHIVES OR GREEN ONIONS SLICED
- SEASONED SALT AND PEPPER
- 12 OUNCES SLICED MOZZARELLA OR 1 PACKAGE SHREDDED MOZZARELLA CHEESE
- 3 MEDIUM TOMATOES, PEELED AND SLICED
- 1 TEASPOON BASIL
- 1 TEASPOON OREGANO
- 1/2 CUP PARMESAN CHEESE
- 1/4 CUP MELTED BUTTER
Instructions
- PREHEAT OVEN TO 425°. BUTTER AND LIGHTLY FLOUR A 9 1/2" DEEP PIE PLATE.
- COVER THE POTATOES WITH SALTED WATER AND BOIL TILL TENDER. DRAIN AND MASH. STIR IN SOFTENED BUTTER, SOUR CREAM, CHIVES AND SEASONED SALT AND PEPPER.
- SPREAD MASHED POTATOES IN PIE PLATE. ARRANGE 6 OUNCES MOZZARELLA CHEESE ON MASHED POTATOES. TOP WITH TOMATOE SLICES, SPRINKLE WITH BASIL AND OREGANO. TOP WITH REMAINING MOZZARELLA CHEESE. SPRINKLE WITH PAARMESAN CHEESE AND MELTED BUTTER.
- BAKE FOR 25 TO 30 MINUTES OR UNTIL CHEESE IS MELTED
