THIS IS THE ULTIMATE SUMMERTIME TOMATO SAUCE. YOU CAN USE IT WITH PASTA, TOP GRILLED CHICKEN BREASTS, FISH, STEAKS OR ON SLICES OF TOASTED CRUSTY FRENCH OR ITALIAN BREAD. THE TOMATOES MAMRINATE WITH FRESH HERBS AND GARLIC WITH A TOUCH OF VINEGAR.

- 3 TABLESPOONS EXTRA AVIRGIN OLIVE OIL
- 2 TABLESPOONS WHITE WINE VINEGAR
- 2 TABLESPOONS CHOPPED FRESH PARSLEY
- 2 TABLESPOONS MINCED SHALLOTS1 TABLESPOON BALSAMIC VINEGAR
- 1 TABLESPOON CHOPPED FRESH BASIL
- 1 TEASPOON MINCED GARLIC
- 1 TEASPOON SALT
- 1/4 TEASPOON FRESHLY GROUND PEPPER
- 1/4 TEASPOON SUGAR
- 2 POUNDS RIPE PLUM OR ROMA TOMATOES, CHOPPED

- COMBINE ALL ABOVE INGREDIENTS EXCEPT TOMATOES IN A MEDIUM BOWL. STIR IN TOMATOES AND LET STAND 30 MINUTES.
