SHRIMP SCAMPI
List of Ingredients
- 1/4 CUP LEMON JUICE
- 1/4 CUP WATER
- 1/4 CUP EXTRA VIRGIN OLIVE OIL DIVIDED
- 1 ENVELOPE GOOD SEASONS GARLIC AND HERB SALAD DRESSING MIX OR CHEESE GARLIC OR REGULAR
- 2 TABLESPOONS CHOPPED FRESH PARSLEY
- 1 TEASPOON MINCED GARLIC
- 1/8 TEASPOON PEPPER
- 1 SHALLOT CHOPPED
- 1 LB SHRIMP, PEELED AND DEVINED
- COOKED PASTA
Instructions
- COMBINE THE LEMON JUICE, WATER AND 2 TABLESPOONS OF OLIVE OIL WITH THE SALAD DRESSING, PARSLEY, GARLIC AND PEPPER. STIR UNTIL BLENDED AND SET ASIDE.
- HEAT REMAINING 2 TABLESPOONS OLIVE OIL IN A LARGE SKILLET ON MEDIUM HEAT AND ADD SHALLOTS SAUTE UNTIL TENDER BUT NOT BROWNED. ADD SHRIMP AND COOK 3 MINUTES OR UNTIL SHRIMP TURN PINK, STIRRING OCCASIONALLY. STIR IN DRESSING MIXTURE AND BRING TO A BOIL ON MEDIUM HEAT, BOIL 1 MINUTE.
- SERVE OVER COOKED PASTA OF YOUR CHOICE.
