TOMATO HERB SAUCE
THIS IS AN EXCELLENT TOMATO SAUCE WHICH GOES GREAT WITH ANY ITALIAN DISH. IT IS QUICK AND FREEZES WELL.
List of Ingredients
- 1 TABLESPOON + 1 TEASPOON OLIVE OIL
- 3 CUPS CHOPPED SEEDED PEELED PLUM TOMATOES WITH THEIR JUICES OR CANNED TOMATOES WITH BASIL
- 1 MEDIUM ONION CHOPED
- 2 TABLESPOONS MINCED FRESH FLAT LEAF PARSLEY
- 2 TABLESPOONS MINCED FRESH BASIL OR 1 TEASPOON DRIED
- 1 TABLESPOON MINCED FRESH OREGANO OR 1 TEASPOON DRIED
- 2 TEASPOON MINCED FRESH THYME LEAVES OR 1/2 TEASPOON DRIED
- 1 GRLIC CLOVE MINCED
- 1/4 TEASPOON SALT
- FRESHLY GROUND BLACK PEPPER TO TASTE
Instructions
- PLACE A MEDIUM SAUCEPAN OVER MEDIUM HEAT AND HEAT FOR 30 SECONDS, ADD THE OLIVE OIL AND HEAT FOR AN ADDITIONAL 30 SECONDS. ADD THE TOMATOES, PARSLEY, BASIL, OREGANO, THYME, GARLIC, ONIONS, SALT AND PEPPER. COOK, STIRRING FREQUENTLY APPROXIMATELY 13 TO 15 MINUTES OR UNTIL THICKENED.

THIS IS AN EXCELLENT LIGHT SAUCE WITH A GREAT TASTE, NOT TO MENTION THAT IT CAN BE MADE AT THE SPUR OF THE MOMENT.
