STRAWBERRY FIG PRESERVES
THIS IS A WONDERFUL PRESERVE. YOU WOULD NEVER KNOW THAT THERE ARE FIGS IN IT. MY MAIL LADY JOYCE ALWAYS GAVE ME THIS WHENEVER SHE MADE IT. THE RECIPE COMES FROM HER.
List of Ingredients
- 3 CUPS MASHED FRESH FIGS ( 2 POUNDS)
- 1 1/2 CUPS SUGAR
- 1 ( 3 OUNCE) PACKAGE STRAWBERRY JELLO
Instructions
- COMBINE THE FIGS AND SUGAR IN A HEAVY SAUCEPAN. COOK OVER MEDIUM HEAT, STIRRING CONSTANTLY FOR 2 TO 3 MINUTES. GRADUALLY STIR IN THE JELLO AND COOK OVER LOW HEAT STIRRING CONTSTANTLY FOR 15 MINUTES.
- SPOON INTO HOT, STERILIZED 1/2 PINT JARS, FILLING TO WITHIN 1/2" FROM THE TOP. REMOVE ANY AIR BUBBLES. WIPE JAR RIMS CLEAN. COVER AT ONCE WITH LIDS AND SCREW ON BANDS. PROCESS IN A BOILING BATH FOR 5 MINUTES.
- YIELDS: 4 ( 1/2 PINT JARS)
