LOW-FAT MEATBALLS
List of Ingredients
- 3 SLICES OF DAY OLD WHITE BREAD, DICED
- 1 LB. LEAN GROUND BEEF
- 1 LB. LEAN GROUND TURKEY
- 2 LARGE EGG WHITES
- 1/3 CUP GRATED ROMANO OR PARMESAN CHEESE
- 3 TABLESPOONS FINELY DICED ONION
- 2 GARLIC CLOVES FINELY MINCED, OR 1 CLOVE( TO YOUR TASTE)
- 1 TEASPOON SALT
- 2 TABLESPOONS FRESH MINCED PARSLEY
- 1/4 TEASPOON COARSELY GROUND BLACK PEPPER
- FLAVORED BREAD CRUMBS FOR ROLLING MEATBALLS
Instructions
- PREHEAT OVEN TO 425°. LINE A 15 1/2 BY 10 1/2" BAKING PAN WITH FOIL. SPRAY FOIL WITH A VEGETABLE SPRAY. SET ASIDE
- IN A LARGE BOWL, COMBINE DICED BREAD AND 1/3 CUP WATER. WITH HANDS, MIX UNTIL BREAD IS EVENLY MOISTENED. ADD GROUND BEEF , GROUND TURKEY, EGG WHITES, CHEESE, ONION, PARSLEY, SALT, PEPPER AND GARLIC MIXING WELL WITH HANDS.
- SHAPE MEAT MIXTURE INTO 24, 2 " MEATBALLS. ( FOR EASY SHAPING, WET HANDS). ROLL MEATBALLS IN FLAVORED BREAD CRUMBS.
- PLACE MEATBALLS IN PAN AND BAKE 15 TO 20 MINUTES, OR UNTIL COOKED THROUGH AND LIGHTLY BROWNED.
- NOTES: YOU CAN SHAPE THE MEAT MIXTURE INTO A RECTANGLE AND THEN CUT INTO 24 EQUAL PIECES BEFOE ROLLING.
- MEATBALLS CAN BE FROZEN FOR FUTURE USE. TO USE FROZEN MEATBALLS, THAW MEATABALLS IN REFRIGERATOR OVENIGHT.
