LOW FAT ALFREDO SAUCE WITH FETTUCCINE
List of Ingredients
- 3 CUPS 1% LOW FAT COTTAGE CHEESE, PUREEDD
- 1 1/2 CUPS 1% MILK
- 1 CUP PARMESAN CHEESE, GRATED
- 1 POUND FETTUCCINE
- 2 TEASPOONS SALT
- 1/4 TEASPOON GROUND WHITE PEPPER
- 2 TABALESPOONS CHOPPED PARSLEY
- 1 TABLESPOONS CHOPPED CHIVES
Instructions
- PUREE THE COTTAGE CHEESE WITH THE MILK IN A BLENDER UNTIL TOTALLY SMOOTH, POUR INTO BOWL UNTILL READY TO USE.
- COOK FETTUCCINE PASTA UNTIL DESIRED DONENESS, DRAIN, THEN ADD THE COTTAGE CHEESE MIXTURE AND PARMESAN TO THE PASTA IN A POT IN WHICH THE PASTA WAS COOKED.
- HEAT ON A LOW SETTING, STIRRING OFTEN TILL HEATED THROUGHOUT, DO NOT BOIL.
- SEASON WITH SALT, WHITE PEPPER TO TASTE. ADD THE PARSLEY AND CHIVES, MIXING WELL.
- YOU CAN ADD SAUTEED OR STEAMED VEGETABLES, COOKED CHICKEN OR SHRIMP.
