    • 6 SLICES CINNAMON RAISIN BREADD
    • 1/2 CUP ORANGE JUICE
    • 1 ENVELOPE UNFLAVORED GELATIN
    • 2 TABLESPOONS + 2 TEASPOONS REDUCED CALORIE MARGARINE
    • 1 TABLESPOON GRATED LEMON PEEL
    • 2 MEDIUM BANANAS
    • 2 TABLESPOONS LEMON JUICE
    • 3 TABLESPOONS SUGAR
    • 1 CUP FAT FREE RICOTTA CHEESE
    • 1 CUP FAT FREE PLAIN YOGURT
    • 2 TABLESPOONS ORANGE PEEL


    Instructions


    1. PREHEAT OVEN TO 375°.
    2. TOAST THE CINNAMON RAISIN BREAD. TEAR INTO LARGE PIECES AND PLACE IN A FOOD PROCESSOR AND PROCESS INTO FINE CRUMBS. SET ASIDE.
    3. IN A SMALL SAUCE PAN, WARM 1/4 CUP ORANGE JUICE, SPRINKLE GELATIN OVER THE WARM JUICE AND STIR UNTIL DISSOLVED. REMOVE FROM HEAT.
    4. IN A 9" PIE PLATE, COMBINE THE BREAD CRUMBS WITH MARGARINE AND LEMON PEEL. PAT THE MIXTURE INTO THE SIDE AND BOTTOM OF PIE PLATE TO FORM A CRUST. BAKE UNTIL LIGHTLY BROWNED ABOUT 8 MINUTES. SET ASIDE.
    5. IN A FOOD PROCESSOR OR BLENDER, COMBINE 1 1/2 BANANAS, REMAINING 1/4 CUP ORANGE, LEMON JUICE AND SUGAR. PROCESS UNTIL BLENDED ADD THE DISSOLVED GELATIN MIXTURE, RICOTTA CHEESE AND YOGURT. PUREE UNTIL VERY SMOOTH.
    6. POUR INTO CRUST. CHILL IN REFRIGERATOR UNTIL SET, ABOUT 4 HOURS OR OVER NIGHT.
    7. WHEN READY TO SERVE, SLICE THE REMAINING BANANA AND ARRANGE ON TOP AND SPRINKLE WITH ORANGE PEEL.
