BIG BOY STRAWBERRY PIE
THIS PIE IS VERY SIMILAR TO THE STRAWBERRY PIES THAT ARE SERVED AT THE BIG BOY RESTAURANTS. THIS IS A FRESH STRAWBERRY PIE, YOU DO NOT COOK THE FRUIT.
List of Ingredients
- 1 CUP WATER
- 3/4 CUP SUGAR
- 1/4 TEASPOON SALT
- 2 TABLESPOONS CORNSTARCH
- 1/4 TEASPOON RED FOOD COLORING
- 1 CUP FLOUR
- 1/2 CUP MARGARINE
- 3 TABLESPOONS CONFECTIONERS' SUGAR
- 1 TEASPOON VANILLA EXTRACT
- 1 3/4 CUP STEMMED AND WASHED FRESH STRAWBERRIES ( 1 QUART)
Instructions
- PREHEAT OVEN TO 350°.
- MIX TOGETHER THE WATER, SUGAR, SALT, CORNSTARCH AND FOOD COLORING AND COOK IN A SAUCEPAN FOR ABOUT 5 MINUTES OR UNTIL THICKENED. SET ASIDE TO COOL.
- MAKE THE CRUST WHILE THE SAUCE IS COOLING.
- COMBINE THE FLOUR, MARGARINE, SUGAR AND VANILLA. PRESS THIS INTO A 9" PIE PAN.
- PRICK ALL OVER AND BAKE IN OVEN UNTIL LIGHTLY BROWNED, ABOUT 5 TO 9 MINUTES. WATCH VERY CLOSELY AS NOT TO OVER BROWN.
- WHEN CRUST IS COOL, ARRANGE STRAWBERRIES IN THE PIE SHELL, EVENLY POUR THE THICKENED SAUCE OVER THE TOP . REFRIGERATE FOR SEVERAL HOURS.
- SERVE SLICES WITH A DALLOP OF FRESH WHIPPED CREAM OR WITH THAWED COOL WHIP.
