LEMON MOUSSE PIE
THIS RECIPE COMES FROM PILLSBURY. I HAVE MADE IT FOR MY FAMILY AND FRIENDS WHO ALWAYS REQUEST IT WHENEVER I HAVE PARTY.
List of Ingredients
- 1 DEEP DISH FROZEN PIE CRUST
- 1 ENVELOPE UNFLAVORED GELATIN
- 1/2 CUP FRESH LEMON JUICE
- 1/4 CUP WATER
- 1 TEASPOON GRATED LEMON PEEL
- 6 TO 8 DROPS YELLOW FOOD COLOR
- 1 ( 8 OUNCE ) PACKAGE CREAM CHEESE, SOFTENED
- 1 CUP POWDERED SUGAR
- 2 CUPS HEAVY CREAM, WHIPPED
Instructions
- PREHEAT OVEN TO 450°. BAKE CRUST FOR 9 TO 11 MINUTES OR UNTIL LIGHTLY BROWNED, REMOVE AND COOL
- IN A SMALL SAUCEPAN, COMBINE GELATIN, LEMON JUICE AND WATER, LET STAND 1 MINUTE. STIR OVER MEDIUM HEAT UNTIL DISSOLVED. STIR IN LEMON PEEL AND FOOD COLORING.
- IN ANOTHER SMALL BOWL, COMBINE CREAM CHEESE AND POWDERED SUGAR AND BEAT UNTIL SMOOTH AND FLUFFY. GRADUALLY ADD THE SOFTENED GELATIN MIXTURE AND BLEND WELL TO INCORPORATE. REFRIGERATE UNTIL SLIGHTLY THICKENED, ABOUT 15 TO 20 MINUTES. FOLD IN WHIPPED CREAM.
- SPOON INTO COOLED BAKED CRUST AND REFRIGERATE UNTIL FIRM, APPPROXIMATELY 1 HOUR.
