    List of Ingredients


    • 1/2 CUP BUTTER, MELTED
    • 10 EGGS
    • 1/2 CUP FLOUR
    • 1 TEASPOON BAKING POWDER
    • 1/4 TEASPOON SALT
    • 1 LB. LARGE CURD COTTAGE CHEESE
    • 1 LB MONTEREY JACK CHEESE, SHREDDED
    • 1 ONION , CHOPPED
    • 8 GREEN ONIONS, CHOPPED
    • 4 SMALL ZUCCHINI SLICED
    • 1/2 CUP PARSLEY CHOPPED
    • 3 TOMATOES, VERY THINLY SLICED


    Instructions


    1. PREHEAT OVEN TO 375°.
    2. ADD 2 TABLESLPOONS OF MELTED BUTTER TO A SAUCE PAN AND SAUTE ONION.
    3. WHIP EGGS UNTIL FLUFFY AND ADD FLOUR, BAKING POWDER, SALT, COTTAGE CHEESE, REMAINING MELTED BUTTER AND HALF OF THE MONTEREY JACK CHEESE MIX WELL TO COMBINE. ADD SAUTEED ONIONS, GREEN ONIONS, ZUCCHINI AND PARSLEY MIXING WELL TO BLEND.
    4. PLACE MIXTURE INTO A GREASED 9 X 13" BAKING DISH OR 2 GREASED PIE DISHES. TOP WITH REMAINING MONTEREY JACK CHEESE AND THEN ARRANGE SLICED TOMATOES ON TOP.
    5. BAKE FOR 20 MINUTES, REDUCE OVEN TEMPERATURE TO 350° AND BAKE FOR AN ADDITIONAL 60 MINUTES OR UNTIL THE TOP IS LIGHTLY BROWNED AND SET.
