APPLE NUT BREAD
List of Ingredients
- 1/4 CUP BUTTER SOFTENEDD
- 1 CUP FIRMLY PACKED LIGHT BROWN SUGAR
- 2 EGGS
- 2 CUPS FLOUR
- 1 TEASPOON BAKING SODA
- 14 TEASPOON SALT
- 1/2 TEASPOON GRATED LEMON RIND
- 1 TEASPOON GROUND CINNAMON
- 1/4 TEASPOON GROUND NUTMEG, OPTIONAL
- 1 LARGE APPLE, PARED, CORED AND GRATED, 1 CUP
- 1/2 CUP BUTTERMILK
- 3/4 CUP CHOPPED NUTS, PECANS OR WALNUTS
Instructions
- PREHEAT OVEN TO 350°. GREASE AND FLOUR A 9 X 5" LOAF PAN, SET ASIDE.
- BEAT BUTTER UNTIL LIGHT, ADD SUGAR, BEATING WELL AT MEDIUM SPEED OF AN ELECTRIC MIXER UNTIL LIGHT AND FLUFFY.
- ADD EGGS, ON AT A TIME, BEATING WELL AFTER EACH ADDITION.
- COMBINE FLOUR, BAKING SODA, SALT, LEMON RIND, CINNAMON, NUTMEG IF USING, AND APPLE IN A BOWL, UNTIL BLENDED. ALTERNATE FLOUR MIXTURE WITH BUTTERMILK, BEGINNING AND ENDING WITH FLOUR MIXTURE. STIR IN NUTS.
- POUR BATTER INTO PREPARED LOAF PAN. BAKE FOR 55 TO 60 MINUTES OR UNTIL A TESTER INSERTED IN CENTER COMES OUT CLEAN.
- COOL BREAD IN PAN 10 MINUTES, REMOVE AND COOL ON A WIRE RACK.
