CHOCOLATE ZUCCHINI NUT BREAD
List of Ingredients
- 1 CUP VEGETABLE OIL
- 2 CUPS SUGAR
- 3 BEATEN EGGS
- 2 OUNCES BAKING CHOCOLATE, MELTED
- 2 CUPS GRATED AND PEELED ZUCHINI
- 1 TEASPOON VANILLA
- 3 CUPS FLOUR
- 1 TEASPOON SALT
- 1 TEASPOON CINNAMON
- 1/4 TEASPOON BAKING POWDER
- 1 TEASPOON BAKING SODA
- 1 CUP CHOPPED NUTS
- 1/2 CUP CHOCOLATE CHIPS
Instructions
- PREHEAT OVEN TO 350°. GREASE TWO 9 X 5" LOAF PANS. SET ASIDE.
- CREAM OIL AND SUGAR TOGETHER, ADD THE BEATEN EGGS. FOLD MELTED CHOCOLATE INTO EGG MIXTURE ALONG WITH ZUCCHINI AND VANILLA.
- SIFT TOGETHER FLOUR WITH SALT, CINNAMON, BAKING POWDER AND BAKING SODA. STIR WITH A WOODEN SPOON INTO ZUCHINI MIXTURE ALONG WITH NUTS AND CHOCOLATE CHIPS. MIX THOROUGHLY.
- POUR INTO PREPARED PANS AND BAKE FOR 1 HOUR. REMOVE FROM OVEN AND LET COOL 10 MINUTES, REMOVE FROM PANS AND PLACE ON A WIRE RACK TO COOL COMPLETELY.
