CRANBERRY BANANA LOAF
List of Ingredients
- 1/4 CUP MELTED BUTTER OR MARGARINE
- 1 CUP SUGAR
- 2 EGGS
- 2 OR 3 MASHED RIPE BANANAS ( 3/4 CUPS)
- 1 CUP CHOPPED FRESH OR FROZEN CRANBERRIES
- 1 1/2 CUPS FLOOUR
- 1 1/2 TEASPOON BAKING POWDER
- 1/2 TEASPOON BAKING SODA
- 1/2 TEASPOON SALT
- 12 TEASPOON CINNAMON
Instructions
- PREHEAT OVEN TO 350°. GREASE LOAF PAN AND SET ASIDE.
- COMBINE BUTTER, SUGAR AND 1 EGG IN MIXING BOWL. BEAT UNTIL SMOOTH. BEAT IN SECOND EGG. STIR IN BANANA AND CRANBERRIES.
- IN A SEPARATE BOWL, COMBINE FLOUR, BAKING POWDER, SODA, SALT AND CINNAMON. STIR WELL. ADD ALL AT ONCE TO BANANA MIXTURE. STIR ONLY TO MOISTEN.
- POUR INTO PREPARED LOAF PAN. BAKE FOR 1 HOUR OR UNTIL TESTER INSERTED IN CENTER COMES OUT CLEAN. REMOVE FROM OVEN AND LET STAND 10 MINUTES. REMOVE FROM PAN AND PLACE ON A WIRE RACK TO COOL.
