    CRANBERRY BANANA LOAF


    List of Ingredients


    • 1/4 CUP MELTED BUTTER OR MARGARINE
    • 1 CUP SUGAR
    • 2 EGGS
    • 2 OR 3 MASHED RIPE BANANAS ( 3/4 CUPS)
    • 1 CUP CHOPPED FRESH OR FROZEN CRANBERRIES
    • 1 1/2 CUPS FLOOUR
    • 1 1/2 TEASPOON BAKING POWDER
    • 1/2 TEASPOON BAKING SODA
    • 1/2 TEASPOON SALT
    • 12 TEASPOON CINNAMON


    Instructions


    1. PREHEAT OVEN TO 350°. GREASE LOAF PAN AND SET ASIDE.
    2. COMBINE BUTTER, SUGAR AND 1 EGG IN MIXING BOWL. BEAT UNTIL SMOOTH. BEAT IN SECOND EGG. STIR IN BANANA AND CRANBERRIES.
    3. IN A SEPARATE BOWL, COMBINE FLOUR, BAKING POWDER, SODA, SALT AND CINNAMON. STIR WELL. ADD ALL AT ONCE TO BANANA MIXTURE. STIR ONLY TO MOISTEN.
    4. POUR INTO PREPARED LOAF PAN. BAKE FOR 1 HOUR OR UNTIL TESTER INSERTED IN CENTER COMES OUT CLEAN. REMOVE FROM OVEN AND LET STAND 10 MINUTES. REMOVE FROM PAN AND PLACE ON A WIRE RACK TO COOL.
    5. 1 LOAF
