CRANBERRY NUT BREAD
List of Ingredients
- 1 CUP CRANBERRIES CHOPPED, FRESH OR FROZEN
- 1/2 CUP NUTS CHOPPED
- 1 TABLESPOON GRATED ORANGE PEEL
- 2 CUP FLOUR
- 1/2 CUP SUGAR
- 1 1/2 TEASPOON BAKING POWDER
- 1 TEASPOON SALT
- 1/2 TEASPOON BAKING SODA
- 2 TABLESPOONS UNSWEETENED APPLESAUCE
- 3/4 CUP ORANGE JUICE
- 1 EGG WELL BEATEN
- GLAZE:
- 1/2 JAR SMUCKERS 100% SINPLE FRUIT ORANGE MARMALADE
Instructions
- PREHEAT OVEN TO 350°. SPRAY A 9 X 5" LOAF PAN WITH VEGETABLE COOKING SPRAY. SET ASIDE.
- PLACE CRANBERRIES, NUTS AND ORANGE PEEL IN A BOWL AND SET ASIDE.
- MIX FLOUR, SUGAR, BAKING POWDER, BAKING SODA AND SALT IN A BOWL. CUT IN APPLESAUCE. STIR IN EGG AND ORANGE JUICE, MIXING JUST UNTIL DRY INGREDIENTS ARE MOISTENED. FOLD IN CRANBERRRY MIXTURE.
- SPOON MIXTURE INTO PREPARED PAN AND BAKE 60 MINUTES OR UNTIL CAKE TESTER INSERTED IN CENTER COMES OUT CLEAN. COOL ON A WIRE RACK FOR 15 MINUTES. REMOVE LOAF FROM PAN AND COOL COMPLETELY. BRUSH BREAD WITH GLAZE.
- GLAZE: HEAT THE 1/2 JAR OF ORANGE MARMALADE IN MICROWAVE AND BRUSH OVER BREAD.
