HIGH FIBER PRUNE OAT BREAD
List of Ingredients
- 1 1/2 CUPS CHOPPED PITTED PRUNES
- 1 CUP ROLLED OATSS
- 1 1/2 TEASPOONS BAKING SODA
- 1/2 TEASPOON SALT
- 1/4 CUP BUTTER OR MARGARINE
- 1 CUP BOILING WATER
- 1 EGG
- 3/4 CUP PACKED BROWN SUGAR
- 1 CUP FLOUR
- 1/4 CUP WHOLE WHEAT FLOUR
Instructions
- PREHEAT OVEN TO 350°.
- COMBINE PRUNES, OATS, BAKING SODA, SALT AND BUTTER IN A BOWL. ADD BOILING WATER AND STIR. SET ASIDE.
- IN ANOTHER BOWL, BEAT EGG AND SUGAR UNTIL WELL BLENDED. ADD FLOURS AND MIX WELLL, BATTER WILL BE STIFF.
- MIX IN PRUNE MIXTURE JUST TO BLENDED.
- POUR INTO A GREASED 8 1/2 X4 1/2" LOAF PAN. BAKE IN CENTER OF OVEN FOR 1 HOUR OR UNTIL TESTER COMES OUT CLEAN.
- COOL IN PAN 10 MINUTES. REMOVE BREAD TO A WIRE RACK AND COMPLETE COOLING.
- MAKES 1 LARGE LOAF ( 10 , 1 SLICE SERVINGS)
