LEMON COFFEECAKE LOAF
List of Ingredients
- 1/3 CUP CRISCO SHORTENING
- 3/4 CUPS SUGAR
- 2 EGGS
- 2 TEASPOON GRATED LEMON PEEL
- 2 CUPS SIFTED FLOUR, SIFT FIRST, THEN MEASURE
- 2 1/2 TEASPOONS BAKING POWDER
- 1 TEASPOON SALT
- 3/4 CUPS 1/2 AND 1/2 OR MILK
- 1/2 CUP CHOPPED ALMONDS
Instructions
- PREHEAT OVEN TO 350°. LIGHTLY GREASE LOAF PAN.
- CREAM TOGETHER CRISCO SHORTENING WITH SUGAR UNTIL LIGHT AND FLUFFY. BEAT IN EGGS AND LEMON PEEL.
- COMBINE FLOUR, BAKLING POWDER AND SALT. ADD TO CREAMED MIXTURE ALTERNATING WITH 1/2 AND 1/2 OR MILK, BEATING WELL AFTER EACH ADDITION. STIR IN NUTS.
- POUR INTO LOAF PAN AND BAKE 50 TO 55 MINUTES OR TILL TESTER INSERTED IN CENTER COMES OUT CLEAN. COOL 10 MINUTES IN PAN. REMOVE AND PLACE ON A WIRE RACK TO COOL COMPLETELY.
- WRAP LOAF AND STORE OVERNIGHT BEFORE SERVING.
