    List of Ingredients


    • 3 1/3 CUPS FLOUR
    • 3 CUPS SUGAR
    • 2 TEASPOONS BAKING SODA
    • 1 TEASPOON SALT
    • 1 TEASPOON GROUND CINNAMON
    • 4 EGGS
    • 2 JARS ( 6 OUNCE EACH) STRAINED APRICOT BABY FOOD
    • 1 CUP VEGETABLE OIL
    • 2/3 CUPS WATER
    • 1 TABLESPOON VANILLA EXTRACT
    • 1 CUP CHOPPED NUTS, YOUR CHOICE


    Instructions


    1. PREHEAT OVEN TO 350°. GREASE 2 ( 9 X 5 X 3") LOAF PANS. SET ASIDE
    2. IN A LARGE MIXING BOWL, COMBINE THE FLOUR, SUGAR, BAKING SODA, SALT AND GROUND CINNAMON. SET ASIDE.
    3. IN ANOTHER BOWL, COMBINE THE EGGS, APRICOT BABY FOOD, OIL, WATER AND VANILLA EXTRACT, WHISKING UNTIL WELL BLENDED. STIR INTO DRY INGREDIENTS AND MIX UNTIL WELL BLENDED. STIR IN NUTS.
    4. POUR INTO PREPARED LOAF PANS AND BAKE FOR 50 TO 60 MINUTES OR UNTIL A TESTER INSERTED NEAR THE CENTER COMES OUT CLEAN. COOL IN PANS FOR 15 MINUTES BEFORE REMOVING TO A WIRE RACK TO COOL COMPLETELY.
    5. 2 LOAVES
