    ORANGE DATE NUT BREAD

    THIS IS A MUCH REQUESTED QUICK BREAD WHICH I MAKE DURING THE HOLIDAYS. THIS RECIPE IS ONE WHICH I HAVE TOILED OVER FOR MANY MONTHS UNTIL I GOT IT JUST PERFECT.


    List of Ingredients


    • 3 CUPS SELF RISING FLOUR
    • 8 OUNCE PACKAGE CHOPPED DATED
    • 1 TEASPOON ORANGE ZEST
    • 1/2 CUP SOFTENED BUTTER
    • 2 EGGS
    • 1/2 CUP SOUR CREAM
    • 1 CUP SUGAR
    • 1 CUP CHOPPED NUTS
    • 3/4 CUPS BOILING WATER
    • 1/4 CUP ORANGE JUICE


    Instructions


    1. PREHEAT OVEN TO 350°. LIGHTLY SPRAY A LOAF PAN AND SET ASIDE.
    2. COMBINE DATES, BOILING WATER AND ORANGE JUICE, SET ASIDE TO COOL.
    3. CREAM TOGETHER THE BUTTER AND SUGAR UNTILL LIGHT AND FLUFFY, ADD EGGS, SOUR CREAM AND ORANGE ZEST AND COOLED DATES WITH LIQUID, MIXING TOGETHER UNTIL BLENDED.
    4. STIR IN FLOUR JUST UNTIL MOISTENED, FOLD IN CHOPPED NUTS AND MIX WELL.
    5. POUR INTO LOAF PAN AND BAKE APPROXIMATELY 45 TO 50 MINUTES OR UNTIL TESTER COMES OUT CLEAN.
    6. WRAP TIGHTLY AND STORE IN REFRIGERATOR. WHEN READY TO SERVE, CUT INTO SLICES AND SERVE WITH ORANGE CREAM CHEESE SPREAD OR APRICOT ORANGE CREAM CHEESE SPREAD.
    7. THIS BATTER CAN ALSO BE USED TO MAKE JUMBO MUFFINS. BAKE 30 MINUTES UNTIL TESTER COMES OUT CLEAN.
    8. ORANGE MARMALADE CREAM CHEESE SPREAD: COMBINE 2 ( 8 OUNCE PACKAGES) SOFTENED CREAM CHEESE, 1/4 CUP ORANGE MAMRMALADE AND 2 TABLESPOONS LEMON ZEST. MIX ALL OF THE INGREDIENTS TOGETHER TILL SMOOTH.



      APRICOT ORANGE CREAM CHEESE SPREAD:
      2 ( 8 OUNCE PACKAGES SOFTENED CREAM CHEESE, 1/4 CUP APRICOT PRESERVES, 2 TABLESPOONS ORANGE ZEST. COMBINE ALL INGREDIENTS UNTIL SMOOTH.
    9. VARIATIONS:
    10. ORANGE CRANBERRY NUT BREAD, SUBSTITUTE 8 OUNCES DRIED CRANBERRIES CHOPPED FOR THE DATES.
    11. ORANGE APRICOT NUT BREAD, SUBSTITUTE 8 OUNCES DRIED CHOPPED APRICOTS FOR DATES.
