    THIS RECIPE COMES FROM THE PALISADES BED AND BREAKFAST AT DASH POINT IN WASHINGTON.


    List of Ingredients


    • 3/4 CUP HALF & HALF OR BUTTERMILK
    • 1 EGG
    • 2 1/2 CUPS FLOUR
    • 1 STICK BUTTER, CUT INTO SMALL PIECES
    • 2/3 CUP SUGAR
    • RIND OF ONE LEMON, GRATED
    • 2 1/2 TEASPOONS BAKING POWDER
    • 1/2 TEASPOON BAKING SODA
    • 3/4 CUPS DRIED APRICOTS, CHOPPED


    Instructions


    1. PREHEAT OVEN TO 400°.
    2. IN A BOWL, BEAT WITH A WHISK THE HALF & HALF AND EGG, SET ASIDE.
    3. MIX FLOUR, BAKING POWDER AND BAKING SODA IN ANOTHER BOWL, CUT IN BUTTER. LIGHTLY STIR IN EGG MIXTURE, APRICOTS, SUGAR AND GRATED LEMON RIND. KNEAD A FEW TIMES ON FLOURED BOARD AND PAT INTO A 9" CIRCLE.
    4. PLACE ON LIGHTLY BUTTERED BAKING SHEET, CUT INTO WEDGES AND BAKE FOR 15 TO 18 MINUTES. SERVES 10
