BLUEBERRY SCONES
List of Ingredients
- 2 CUPS FLOUR
- 3 TABLESPOONS SUGAR
- 1 TEASPOON BAKING POWDER
- 3/4 TEASPOON SALT
- 6 TABLESPOONS CHILLED BUTTER
- 1 1/2 CUPS BLUEBERRIES
- 1 TEASPOON GRATED LEMON ZEST
- 2 LARGE EGGS BEATEN
- 1/3 TO 2/3 CUP HEAVY CREAM
Instructions
- PREHEAT OVEN TO 400°.
- IN A BOWL SIFT TOGETHER THE FLOUR, SUGAR, BAKING POWDER AND SALT. ADD CHILLED BUTTER AND CUT INTO FLOUR MIXTURE WITH A PASTRY BLENDER OR WITH YOUR FINGERS TILL COARSE CRUMBS FORM. ADD BLUEBERRIES AND LEMON ZEST WITH HANDS TO MIX WELL.
- POUR MIXTURE ONTO A PASTRY BOARD AND MAKE A WELL IN THE CENTER, ADD THE 2 BEATEN EGGS AND HEAVY CREAM. MIX WELL WITH A LARGE FORK IN THE CENTER BRINGING THE FLOUR TO THE CENTER UNTIL MOISTENED. ( DO NOT OVER MIX AND BREAK UP BLUEBERRIES). WITH A DOUGH SCRAPER MOVE DOUGH AROUND UNTIL BLENDED. FLATTEN OUT DOUGH INTO A ROUND CIRCLE, CUT INTO WEDGES. BRUSH TOPS WITH SOME HEAVY CREAM AND SPRINKLE WITH SUGAR.
- PLACE WEDGES ON A BAKING SHEET AND BAKE FOR APPROXIMATELY 20 TO 25 MINUTES OR UNTIL GOLDEN BROWN.
