CARIBBEAN SCONES
List of Ingredients
- 1 CUP FLOUR
- 2 TEASPOONS BAKING POWDER
- 1/2 TEASPOON SALT
- 1 TEASPOON SUGAR
- 1 CUP MASHED COOKED SWEET POTATOESS
- 3 TABLESPOONS MELTED AND COOLED BUTTER
- BUTTER
- HONEY IF DESIRED
Instructions
- PREHEAT OVEN TO 375°.
- GREASE A BAKING SHEET AND SET ASIDE.
- SIFT FLOUR, BAKING POWDER AND SALT INTO A LARGE BOWL. STIR IN SUGAR.
- IN A LARGE BOWL, THOROUGHLY MIX SWEET POTATOES AND 1 1/2 TABLESPOONS MELTED BUTTER WITH A FORK. ADD TO DRY INGREDIENTS AND MIX TO FORM A SOFT DOUGH.
- TURN OUT ONTO FLOURED SURFACE. ROLL OUT WITH A FLOURED ROLLING PIN TO MAKE A ROUND 1/2" THICK DOUGH. CUT INTO ROUNDS WITH A 2" FLOURED BISCUIT CUTTER.
- PLACE 1 TO 1 1/2" APART ON BAKING SHEET. BRUSH TOPS WITH REMAINING 1 1/2 TABLESPOONS MELTED BUTTER.
- BAKE 20 MINUTES OR UNTIL PUFFED AND LIGHT BROWN. SPLIT AND SERVE WARM WITH BUTTER AND HONEY.
- 10 SCONES.
